I have both the Trezor Model T and One. They're very similar aside from the Model T having a touch screen. They both use the same interface for managing your crypto - so for the most part you wont even be able to tell the difference.
The model T enables a couple more crypto's than the One version: Ripple, EOS, Cardano, Monero and Tezos - so if you don't plan on hodling those, the One will do you just fine.
